Crowd Pleasing Vegan French Toast

Okay, tell me who doesn't love French toast? Well, let me tell you something you can't possibly believe until you try this recipe. Vegan French toast is BETTER! Yep I said it, better! This recipe is completely egg-less, light, sweet, warming, tender with a subtle bite, wholesome, and filling. This French toast is a dream in a bite. The power of veganizing indulgent sweet meals like French toast is that the vegan version won't leave you feeling heavy, full and like you overdosed on sugar. Instead you feel lighter with all the same taste benefits. Use your favorite bread for this recipe, I have used vegan challah, sourdough, vegan brioche, normal store bought bread and even stale banana bread and they have all worked perfectly, so pick your favorite bread and lets get started. This recipe was a favorite at Christmas brunch last year, completely demolished!  Morever, this recipe is the base  to all my crazy French toast creations like; speculoos crusted and vegan Nutella blended into the base. Let your imagination run wild and create something magical, or just keep it simple because this recipe is just that good! 

Bread Soak:

  • 2 cups Plant Based Milk
  • 4 tbsp chickpea flour
  • 1 tsp cinnamon
  • 1 tsp vanilla extract or powder
  • 1/4 tsp salt
  • Coconut oil for cooking
  • Bread of your choosing (I suggest if using a loaf: slice into thick slices)

Topping options: chopped candied pecans, banana coins, berries, chocolate, nut spreads, chopped notes, dried fruits, maple syrup, chocolate sauce...

Instructions:

Heat a griddle or pain to medium heat. Blend or whisk all ingredients until combined and no lumps remain. Once griddle is hot add some coconut oil to grease. Place a slice of bread into the soak, allow to sit for a couple seconds on each side until the bread it completely full of the liquid. Place the piece of bread into the pan and cook on both sides until golden brown and cooked through. Repeat the process for all slices and serve with maple syrup and your favorite toppings.
